Name Scientific: Pelotretis flavilatus
Soles are widespread in New Zealand waters, particularly in the south, from near the shore to 100 metres depth. We provide Soles with the head and skin off and are mouth watering when pan fried with flour, lemon, salt & pepper.
Season well with salt and pepper, a squeeze of lemon juice, and place over the frying pan. Cook for 5 minutes on each side with olive oil (depending on thickness) until the skin begins to bubble and the flesh turns from an opaque white to a solid white.
